Caribbean Green Seasoning

Great for stews, sauces, curries, soups or use as a marinade.

Ingredients:
1 bunch cilantro
1/2 bunch parsley
2 stalks celery
3 dreen onions/scallion
10 cloves darlic
1 small onion
2 sm ginger
8 sprigs thyme
1 spicy pepper

Instructions:

Roughly chop up the cilantro, parsley, celery, green onions, remove stems from the pepper and add to the blender, along with the garlic, onion, ginger, thyme.

Process until the mixture looks pureed like baby food. If you are using a food processor then you will not need to add water, process until the seasoning looks like pureed baby food, scrape down sides and process again.
If you are using a blender then you will need to add water, process until the seasoning looks like pureed baby food, scrape down sides and process again.

To use your green seasoning, use about 2 tablespoons of green seasoning per recipe.

You can freeze them in ice cube trays, then remove the cubes and store in freezer bags.

Savory Italian Tart

Ingredients:

1 package puff pastry dough
400 gr ground beef
2 large tomatoes, diced
2 tbsp chopped fresh basil
1 clove garlic, minced
2 tbsp shredded Parmesan cheese
1/4 cup shredded cheddar cheese
3 tbsp milk
2 eggs
1/2 cup heavy cream
1/2 tsp salt
1/4 tsp black pepper

Instructions:

Preheat the oven to 220ºC.

Roll puff pastry into a circle approximately 33-35 sm wide. Press dough into an 30-sm tart pan. Place a piece of parchment paper over the dough and fill with dried beans or pie beads. Bake 8-10 minutes.

Meanwhile, cook ground beef, breaking it up as it cooks, until the meat is no longer pink, about 7 minutes. Add the tomatoes, garlic, basil, pepper, salt and cheese.
In separate bowl, whisk the eggs, cream and milk together. Combine both mixtures and mix.

Pour into the baked shell and bake 15 minutes. Reduce temperature to 180ºC. Bake an additional 10-12 minutes or until egg mixture is set and golden. Cool 5-10 minutes before cutting.

Crispy Smashed Potatoes

Ingredients:
700g baby potatoes
4-5 sprigs of fresh rosemary
2-3 heaped tbsp duck or goose fat
1 small bulb of garlic, cloves removed & skins left on
salt, to taste
fresh parsley, to garnish

Instructions:
Pop your potatoes in cold water and bring to the boil for 20mins, or until knife tender. Drain and allow to steam dry for 5-10mins, or until they mostly stop steaming (important to release as much moisture as possible)
Meanwhile, add 3 tbsp goose/duck fat to the tray and place in the oven for 15mins at 220c/430f, or until smoking hot.
Carefully take tray out the oven and add your garlic and rosemary. Swish around with a spoon to infuse the oil, then space out your potatoes (careful the fat doesn't spit at you).
One by one gently press down on each potato with a fork, potato masher or even a mug.
Use a brush to baste the tops with fat then sprinkle with salt. Pop in the oven for 30-35mins or until deep golden brown. No need to flip

Chicken Pot Pie Biscuits

Ingredients:

6 tbsp butter
1 onion, chopped
salt and pepper
5 tbsp flour
1 sprig fresh thyme(leaves)
1 sprig rosemary (leaves)
3 cups chicken stock
2 chicken breasts
1 cup milk
1 large potato, diced and blanched
1 cup peas
4 sheets puff pastry
1 egg, beaten

Instructions:

Preheat oven to 180 degrees C.

Melt the butter in a pan. Add the onion and cook for 10 minutes. Add salt, pepper, flour and herbs and cook for 3 to 4 minutes.

Add the stock and bring to a boil. Add the chicken, then simmer about 15 minutes.

Remove the chicken, add the milk, and cook for 4 minutes. Remove from the heat and split the sauce in half.

Shred the chicken.

To one half of the sauce add the potatoes, peas and shredded chicken and place into the fridge.

Cut 5 sm circles from a sheet of puff pastry and lay a spoonful of the stew on top. Cover with a second circle of pastry and press the edges together.

Brush with egg wash and bake for 20 minutes until golden.

Non Alcoholic Sangria

Ingredients:

1 apple
2 oranges
1 lemon
1 cup blackberries
1 cup sparkling water
200 ml apple juice
240 ml orange juice
720 ml cranberry pomegranate juice

Instructions:

Wash and dry all the fruit.
Cut the apple into small pieces. Slice the oranges and lemon. Cut the lemon in half. Slice one half and juice the other half.
Place the apple pieces, orange and lemon slices and blackberries into a glass pitcher.
Fill the pitcher with sparkling water, apple juice, lemon juice, orange juice and cranberry pomegranate juice.
Stir well using a wooden spoon.
Cool in the fridge for at least one hour then serve.

Refreshing Cucumber Salad

Ingredients:

600-700 gr cucumbers
3 Tbsp fresh dill, chopped
1 garlic clove, minced
½ tsp. sea salt
½ tsp. pepper
1 ½ Tbsp. lemon juice
2 Tbsp. olive oil

Instructions:

Slice the cucumbers into small sticks.
Place the cucumber sticks into a mixing bowl. Sprinkle the fresh dill, minced garlic, lemon juice, olive oil, salt, and pepper on top and mix well. Serve.

This Refreshing Cucumber Salad is crisp and fresh and perfect for hot summer days. Best served with meat, grains or tossed with tofu.

Soft Potato Focaccia Bread

Ingredients:
1 medium potato (150 grams)
300 grams flour
1 1/2 tsp active dry yeast
1/2 tsp honey
1 tsp salt
1 1/2 Tbsp olive oil
170 ml warm water

2-3 sprigs fresh rosemary leaves
2-3 pinches salt
2-3 Tbsp olive oil

Instructions:

Boil the unpeeled potato until tender. Drain, remove skin and mash well.
In the bowl of a stand up mixer add the flour, yeast, honey and salt and the mashed potatoes, start to knead.

Continue to knead, add the oil, then pour the water slowly, continue to knead until dough is smooth and starts to pull away from the sides of the bowl. Knead the dough into a ball. Place in a lightly oiled bowl, cover with plastic wrap and let rise in a warm area for 2 hours or doubled in bulk.

Pre-heat oven to 200C. Lightly oil a pizza pan.
Place the dough in the prepared pan, with finger tips make prints in the dough. Sprinkle with rosemary leaves, salt and drizzle with olive oil.
Bake for approximately 20 minutes.

6 Healthy Salad Dressings

1. Apple Cider Vinegar Salad Dressing
1 cup olive oil
½ cup apple cider vinegar
½ Tbsp dijon mustard
1 garlic clove – minced
salt and pepper – to taste

2. Balsamic Salad Dressing Recipe
½ cup balsamic vinegar
¼ cup olive oil
2 tsp maple syrup
1 tsp dijon mustard
1 garlic clove – minced
salt and pepper – to taste

3. Seed Butter Salad Dressing
½ cup seed butter or nut butter – sunflower seed, almond, peanut butter, etc.
3 Tbsp tamari sauce or soy sauce
2 Tbsp maple syrup
1 Tbsp apple cider vinegar
2 Tbsp water
½ Tbsp freshly grated ginger
1 garlic clove – minced

4. Honey Mustard Salad Dressing
1 cup olive oil
½ fresh lemon – juiced
1 Tbsp apple cider vinegar
2 Tbsp honey
2 Tbsp dijon mustard
salt and pepper – to taste


DIRECTIONS: Combine all ingredients together in a mason jar. Seal the lid and shake up to mix. Store in the fridge for up to two weeks. Re-shake the jar before using it again.

5. Creamy Avocado Salad Dressing
1 ripe avocado
½ cup water

Garlic Herb Baked Chicken Wings

Ingredients:

500 gr chicken wings separated
2 tablespoons vegetable oil
2 teaspoons herbes de Provence
1 teaspoon roasted garlic powder
1 teaspoon Kosher salt

Glaze:
2 tablespoons butter
2 garlic cloves minced
1 teaspoon herbes de Provence
20 gr honey

Instructions:

Preheat oven to 200 degrees C and line a baking sheet with parchment paper.
In a large bowl, combine wings, vegetable oil, garlic powder, herbs de Provence, and salt. Toss to coat evenly.

Spread wings onto the prepared baking sheet and bake for 15 minutes. Remove from the oven and flip. Return to the oven for an additional 15 minutes.

While the wings are cooking, make the glaze. Melt butter in a small skillet over medium-high heat. Add garlic and herbs de Provence and cook 30 seconds. Add honey and stir until smooth.

Once fully cooked, remove wings from the oven and change the oven to broil. Flip all wings skin-side up and brush with glaze. Broil for 2-4 minutes until crispy.
